Stadium Nachos

Ingredients:

• 16 oz.Sour Cream get the larger size if you expect a really large group
• 16 oz. Guacamole
• 4 – 8 cups Shredded Lettuce
• 2 – 4 tomatoes
• 1 regular or large jar of salsa
• 1 large bag of triangle tortilla chips

Instructions:

Spread guacamole over the surface of burrito’s, Using a plastic zip lock bag with the end cut fill in the side lines and end zones with sour cream. Mark the 50-yard, and mid-field yard lines.

• Add jalapeño pepper as a football on the 50-yard line.
• Add the ends of the burrito with shredded lettuce and the sidelines with
• sliced black olives and diced tomatoes. Serve with tortilla chips and salsa.

Chicken Salad Sandwich with Curry

Ingredients:

• 4 Croissants, split
• 2 cups chopped chicken
• about ¼ cup Chopped Celery
• one apple chopped
• about a half cup Honey Roasted Peanuts
• one half tsp curry
• four lettuce leaves
• at least on tbs mayo or salad dressing
• double recipe for additional guests

Instructions:

• Mix chicken, celery, apple, roasted peanuts, curry, together.
• Put a piece of lettuce on croissants and add chicken mixture croissants.
• Delicious sandwich…..Enjoy

3 Bean Chili

Ingredients:

• 1 pound lean ground beef or ground chicken
• 1 onion, chopped
• 2 cloves garlic chopped
• 1 can (28 ounces) diced tomatoes (28 ounces) do not drain
• 1 can each black beans 15 oz drain and rinse
• 1.kidney beans 15 oz drain and rinse
• 1 pinto beans 15 oz drain and rinse
• 1 use only one cup water
• 1 tbls chili powder
• 2 teaspoons ground cumin
• 1 teaspoon Bouillon
• Light sour cream to put on top or some Shredded cheddar cheese or both

Instructions:

• add to large pan the beef or chicken, onion and garlic until cooked
• add tomatoes with the juice, and the 3 cans of beef, add the water, chili powder, cumin and bouillon. Bring to a boil.
• Turn down the heat and simmer
• Use the sour cream or cheese or both add to the top. Enjoy…

Peanut Butter Graham Cracker Cake

Ingredients:

• 2 cups of peanut butter put 11/4 cup in one measuring cup and 3/4 cup in another
• 3/4 cup butter or margarine
• 2 cups powdered sugar
• 3 cups graham cracker crumbs
• 2 cups Semi-Sweet Chocolate Mini Morsels 12 ounce package

Instructions:

• Stir vigorously 1 1/4 cups peanut butter and butter in large mixer bowl until creamy.
• Gradually beat in 1 of the cups of powdered sugar.
• Using a wooden spoon, work in remaining powdered sugar, graham cracker crumbs and add 1/2 cup chocolate chips. Press
• evenly into greased 13 x 9-inch baking pan.
• Melt the last part of the 3/4 cup peanut butter and 1 cup of chocolate chips in a saucepan using lowest heat, keep stirring, until smooth.
• Pour over the graham cracker crust. Now put in frig for about an 1 hour until chocolate is firm. When firm you may cut into bars. Keep in frig.

Shrimp in Beer Sauce

Ingredients:

• 2 lbs shrimp (shelled and deveined)
• 4 tablespoons butter
• 2 teaspoons garlic, minced
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• 1 teaspoon dried thyme
• 1 teaspoon cayenne pepper
• 1/2 teaspoon crushed red pepper flakes
• 1/2 teaspoon salt, to taste
• 1/2 teaspoon black pepper, to taste
• 1/2 cup beer

Instructions:

• Saute garlic and herbs in butter until garlic is slightly browned.
• Add shrimp, stirring constantly, until shrimp are pink and done.
• 3 Pour in beer, simmer 1 minute more, and serve! Enjoy….

Super Mojito

Ingredients:

• 4.0 cl White Rum
• 3.0 cl Fresh lime juice
• 3 sprigs of Mint
• 2 teaspoons Sugar
• Soda Water

Instructions:

• Mint sprigs muddled with sugar and lime juice.
• Rum added and topped with soda water.
• Garnished with sprig of mint leaves.
• Served with a straw. Enjoy….

Lamb and Red Wine Gravy

Heat oven to 400 degrees

Ingredients:

• purchase 2 racks of lamb
• sprinkle with salt and pepper
• add olive oil In a large skillet heat racks of lamb over medium-high heat, brown until they look even in color. Now transfer to roasting pan. Put in oven and roast for about 20 to 30 minutes.

I like it plain just like that but if you would like a red wine sauce here you go

In the same skilled saute a quarter cup of onions until tender and add a cup of red wine and about a teaspoon of rosemary leaves, a half teaspoon of thyme, one cup of beef broth, two tablespoons of butter and some salt and pepper. Simmer until like a gravy and pour over the lamb

Tilapia Recipe

Only a 15 minutes cook time – 350 degree oven for 12 to 15 minutes

2 tablespoons butter 2 cloves garlic, finely minced dash pepper dash salt pinch dried dillweed or parsley dash paprika 4 tilapia fillets

Combine butter, garlic, pepper, salt, dillweed, and paprika in a small sauce pan. Melted butter and remove from heat. Cover the bottom of a shallow baking dish or line with parchment paper placing the tilapia on buttered area. Top each tilapia fillet with the seasoned butter mixture. Bake at 350° for 12 to 15 minutes, tilapia will flakes easily with a fork.

Cornish Game Hen

• Preheat oven to 450 degrees
• Cover hens in just a little olive oil, season them with salt and pepper.
• Add a lemon wedge and one sprig rosemary inside of each hen and put the hens in a roasting pan, make some slits in the hens and put in some cut cloves of garlic. Now put in oven for 25 minutes.
• after 25 minutes lower oven heat to 350 and bake 25 minutes longer
• In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer make sure the hens are golden brown .

Gravy

• Remove hens from oven to a nice platter, pour into roasting pan all of the juices into a sauce pan. Be sure to cover the hens foil to keep warm.. Cut the hens length wise and spoon in sauce. Oh, what delicious meal..

Cupid Sent Me

• 1 Cocktail Glass to strain mixture into
• 1 teaspoon grenadine
• 1 ounce lemon juice
• 1 1/2 ounces Scotch
• 1 ounce Grand Marnier

Using a shaker fill half way with ice cubes and combine all ingredients. Shake well.

Before dinner drink

Looks and tastes best in a highball glass filled with ice cubes and a pretty something pretty to stir with. Put all ingredients into the highball glass and stir

• 1 ounce peach schnapps
• 1 ounce vodka
• 2 ounces cranberry juice
• 2 ounces orange juice

Chocolate Covered Strawberries

Directions:

• Place 15 to 20 peaces of Strawberries over wax paper.
• Place 1 pound of chocolate into Microwave safe bowl and heat at low to half power for one minute till melted.
• Using spoon drizzle melted chocolate over strawberries.

Bowling with Pumpkins

1. Use 4 or 5 smaller pumpkins about 4 to 6 inches in diameter or however many kids want to play.

Cut some straws in half. In a Bucket fill with ice and put in full size marshmallows. Now lets see who can get the most marsh mellows in the shortest time usually 8 minutes is good.
