Acadia National Park, Maine

One state that is really popular in the summer is Maine, the coastline with it’s rocky beaches, beautiful sail boats and some of the coldest waters to swim in are on Route 1A and offer a long line of beaches from York Harbor, to Ogunquit with it’s soft white sand. Old Orchard Beach it great and so well known for not only it’s beautiful sandy beach but it’s amusement park, fantastic food and handsome lifeguards. When you visit Maine, the food is amazing lobster, fiddlehead’s, new little potatoes are my favorite. I love fishing for rainbow trout and sitting by the fantastic lakes. Listening to the waves slapping the shore is so relaxing.

A spring time vacation in Seattle Washington is very much a family friendly city. That sound American to me. Once arriving and settling into your lodging it is time to check out the city. Kids of all ages do not want to miss the 41-second elevator ride up 520 feet to the observation deck of the Space Needle that was built for the 1962 World’s Fair . There is even a restaurant at the top that revolves while your having lunch. Your children will renew their interest in Science at the Pacific Science Center. It is not only informative but fun.

Tripod

Using  “available light” or natural lighting is a great way to get emotion in your image, deep colors and softer light is beautiful but many times the picture will come out blurry. To combat this try using a tripod for a more steady shot and to let the camera have more time to collect light. If you are using a small camera or a traveling light try using a “table top” tripod they are inexpensive and can fit in your pocket.

Fill Flash

Having back lit photographs can ruin a great family portrait. This usually happens when people are standing in front of a window with the sun shinning through or in front of the sun outside. The best way to get the proper exposure is to use the “ Fill Flash”.  Almost all cameras have this feature (usually marked with a lightning bolt and a +/- icon) and will clean up almost any small lighting issue.

Rule of Thirds

This is a very important rule for setting up composition here is a idea on what it is:

“The rule of thirds just means rule of thumb. Common in art, photography and design. Rule of thirds is as the image is imagined and then divided into nine equal parts by two equals spaced horizontal lines, two equal spaced vertical lines, and the important compositional elements should be placed along these lines or intersections. The idea is that the technique should align a subject and create more tension, energy.”

Cropping

This can be one of the most under looked practices in all of photography and is an art form in its own right. Adding focus to the most dramatic parts of the photograph can really make an average picture a stunning in just a few minutes.

Size

Remember you can own the biggest and greatest camera in the world but it will not do you any good if you don’t take with you on your trips.  When selecting a camera find something that will suit you and is comfortable in your hands. If you don’t mind the size of a larger DSRL camera then try one of them. They are fast, fun, and can take stunning photos, even on the fully automatic modes. If lugging around a bigger camera doesn’t sound like much fun there is nothing wrong with the little point and shoots.

I can not stress this feature enough, great photos on your website not only show off the unique qualities of your inn, they validate your property to perspective guest. Hiring a professional photographer is as simple as “googling”  your area and viewing their portfolios. As with anything your personal budget is important, if you have the funds to hire a top-notch photographer, do it as the cost is well worth every cent.. If you are short of cash flow there is an alternative to get high quality photographs. This may be a short cut but is certainly cost effective and we have found some of the best photographers.

Go to your local University or Junior College, or high school. post a bulletin in the Photography Department/Art. Let them know you are looking for a Photo Major to photograph your property. Many of these young photographers will do it for a fraction of the cost. Most will want to add the images to their portfolio. I have personally suggested this method to dozens of clients and as a developer it really brings the site in together when it has stunning pictures. These young photographers have great photo equipment  Please note, always remember to find out who holds the copyright on the photos so you can use them for print as well as the web.

Easy Navigation

Content is King! Content can make the difference between having a website that is ranked high in the search engines or buried so low that guests will not know you exist. Knowing where and how to display your content becomes an essential part of your website. Make sure the site has an easy link menu that lets the user find information quickly from any page. Do not overload pages with too much text, photo’s or graphics. Keep a balance. Many web designers will try to add all the information on a couple of pages but this is can be counter productive if your guest doesn’t read any of it. Take your time when coming up with content. Be simple and creative it can make all the difference in the world.

Ask your guests to post their experience at larger review sites like Trip Advisor this way you will build a loyal following. By posting or having a link to your reviews new guests can get a better sense of what makes your B&B/Inn special.

A trendy Flash based websites may look really beautiful and fun but SEO (Search Engine Optimizing) is very difficult because most search engine spiders are unable to read your website. Remember traffic to your website is produced by the Search Engines. Your content is King!.

When discussing your web site with your designer and he/she asks for your content (text) remember when writing this content how your guest read and understand your information. The addition of music to your web site will slow down the loading time of your website   Just one more comment about Flash. If used correctly Flash can be a wonderful tool to complement your CSS based website. Now don’t worry if some or all of this come across as foreign that is why they have web developers, ask your web designer or web master anything you don’t understand. Valentine’s Day in Napa Valley is absolutely beautiful. The air is crisp, the sun is shining, and when you arrive in Napa after about an hour drive full of laughter and great stories of days gone by and questions about the new adventure to come because after all this is your first visit to Napa. Some of us have never been there before. Wow! the ocean is roaring when I opened the car door, and the wave are higher than I have ever seen. Napa it is adorable like something from a storybook. After shopping and buying gifts my sons are so hungry the cool air, and the walking for hours has them looking for the perfect restaurant. I am so happy to be with them both. The boys find a lovely older Tuscan restaurant that serves great wine, pasta, and bread to die for. After a wonderful meal we decide to check out wine country I am so happy because being with my sons the absolute loves of my life is the best time ever there is always laughter, and stories and food and just plain fun. The only one we were missing was my daughter and she fits right in with them laughing and telling stories. This is a Valentine Day worth remembering for a life time. Next year she will be there too. Happy Valentine’s Day to all of you.

Tofu Turkey Dinner

Ingredients

6 lb / 2.7 kg firm tofu

Cornbread Stuffing

• 1 cup / 175 g diced onion
• 1 cup / 175 g diced celery
• 1 T sesame oil
• 1/2 t sage
• 1/2 t thyme
• 1 t parsley
• Salt and pepper to taste
• 3 cups / 350 g cubed whole wheat bread
• 2 cups / 225 g cubed corn bread
• 1/2 cup / 100 ml vegetable broth
• 1/2 cup / 75 g walnuts or pecans (optional)

Basting Liquid

• 1/2 cup / 100 ml sesame oil
• 1/4 cup / 4 T soy sauce

Gravy

• 1 onion, diced
• 2 T oil
• 1 cup / 100 g sliced mushrooms
• 5 T flour
• 2 cups / 400 ml vegetable broth
• 1/2 cup / 100 ml soy sauce
• 1/2 cup / 100 ml water

Pre Cooking Instructions

An hour prior to cooking, take tofu and mash it and place the tofu into a colander with a “cheesecloth” then place the colander over a bowl to catch the any excess liquid form the tofu, If needed you somthing heavy.

Adding The Stuffing

Saute the onion and celery in the sesame oil. Mix the seasonings into the cubed bread. Combine everything, adding enough vegetable broth to moisten. Add nuts if desired.

Preheat the oven to 400F/200C/gas mark 6. Press the tofu with your hands to form a hollow center, fill with the stuffing mixture and press down. Flip the tofu onto an oiled baking sheet. Remove the towel or cheesecloth. Baste the tofu with 3/4 of the sesame oil and soy sauce mixture, cover with foil and bake for 1 hour. Remove the foil, baste again with the remaining basting mixture, return to the hot oven, and bake uncovered for 20 minutes or until golden. Transfer to a serving platter and serve with gravy.

Gravy

Saute the onion in the oil until soft. Add the mushrooms and saute for 1 minute more. Shake the flour, broth and water together in a jar and add this to the onions and mushrooms. Mix in the soy sauce and stir over medium heat until thick.

Patti’s Pumpkin Bars

(Pre-heat oven to 350 degrees)

• 2 cups all purpose flour
• 2 tsp. of baking powder
• 1 tsp. baking soda
• 1/4 tsp. salt
• 2 tsp. ground cinnamon
• 1/2 tsp. all spice
• 1/2 tsp. cloves
• 4 eggs
• 1-15 oz. can pumpkin
• 1 2/3 cup sugar
• 1 cup oil
• 3/4 cup chopped pecans (optional)
• 1 Tablespoon Vanilla

Stir together thoroughly all dry ingredients. Set aside. In another large mixing bowl, beat together eggs, oil, and pumpkin. Make a well in the middle of the dry ingredients and add the liquid ingredients; beat only until well combined with mixer (about 2 minutes, no more). If adding the pecans, stir these in now.

Lightly Pam a 15″X10″X1″ pan and spread batter evenly.

Bake at 350 degrees for 25-30 min. I always check baked goodies several minutes before the earliest baking time as ovens vary. You can always bake a little longer but once something is overdone and dry…oops! Insert wooden toothpick and it should come out clean when done. Cool on wire rack.

Cream Cheese Frosting:

Beat together 3 oz of cream cheese (take this out early so it will be soft) with 1/4 cup of butter softened and add one tsp. vanilla. Beat until nice and fluffy.

Gradually add two cups of confectioner‘s sugar (sift this so that frosting will not have lumps).
Sweetness levels are individual. If you would like to cut this (a little fresh lemon juice or salt will do nicely).

Frost when bars are totally cool when feeling the underside of the pan. After you cut into bars you can decorate the top of each little bar with crisscrossed pecans.

Snow Grapes Recipe

Ingredients:

• 2 lbs black seedless grapes
• 1/2 cup sour cream
• 2 tbs cinnamon
• 1/4 cup brown sugar

Instructions:

Mix. Wash and stem grapes and place in bowl. Mix them with sourcream, cinnamon and sugar. Place in smaller cups and garnish with orange slices and mint.

Jody’s Delicious  Baked Apples

Ingredients:

• 6 apples (or at least 1 per person)
• Orange Marmalade

Instructions:

cut out the core of each apple and fill with a teaspoon or two of orange marmalade.
Bake in 350 degree oven about 35 to 45 minutes
Serve warm with sharp cheddar cheese or ice cream over the top and a sprig of mint

Ginger Olive Oil Bread

• 1 2/3 cup flour
• 1 cup sugar
• 1 teaspoon powdered ginger
• 1 teaspoon baking powder
• ½ tsp salt
• 1/3 fruity extra-virgin olive oil
• 1 cup buttermilk
• 2 eggs
• zest from 1 lemon

Preheat oven to 350 degrees. Butter an 8 inch square cake pan and line the bottom with parchment. Butter the top of the parchment and dust the pan lightly with flour.

Sift flour, sugar, ginger, baking powder, and salt into the bowl of a stand mixer fitted with the paddle attachment. Slowly add the oil and mix on medium speed until blended but still crumbly. Scrape down bowl. Add eggs, one at a time, scraping down sides of bowl and mixing well after each addition. With mixer on low, add the buttermilk slowly. When all incorporated, turn the mixer to high and beat for about 15 to 20 seconds. Add the lemon zest and pour batter into the cake pan.

Bake for approximately 30 minutes until the top springs back when touched and the cake is just starting to turn golden. Remove the pan from the oven to a cooling rack and let sit for 15 minutes. Remove from the pan, cut into squares and serve..
