5 Great Tailgating Recipes

5-tailgating-recipes_01Looking for some great recipe ideas for your next tailgate or back yard BBQ well we have a few ideas that will get you started and it wont break the bank.  No matter what your taste, we will have something for you to enjoy before the game.  Even if you are a vegetarian.

Apple BBQ Pulled Pork

Ingredients:

  • One 3 pound boneless pork loin roast
  • One 8-oz. can tomato sauce
  • 3/4 cup barbecue sauce, store bought
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 red onion, sliced
  • 1/2 Granny Smith apple, diced
  • 2-3 tablespoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon

Directions

  1. Combine everything except the pork in a 4 quart slow cooker.
  2. Tie pork together with cooking twine.
  3. Place pork in cooker and coat with sauce mix.
  4. Cover and cook for 8-10 hours on low heat, turning pork over once around hour 4 or 5.
  5. Remove pork and shred by hand.
  6. Empty sauce from slow cooker into bowl and serve alongside pork. Serve on hamburger or hoagie buns if desired.

Classic Beef Kabobs

Ingredients

  • 1 1/2 to 2 pounds Beef tenderloin
  • 1/3 cup bottled Italian Salad dressing
  • 12 whole fresh Mushrooms
  • 2 small zucchini
  • 6 cherry tomatoes
  • 3 to 4 cups hot cooked rice, cooked in beef broth

Directions

  1. Cut meat in 1-1/4 to 1-1/2-inch cubes. Place in shallow dish and add Salad dressing. Mix well. Cover and let marinate 30 minutes. If marinated longer, refrigerate.
  2. Remove stems from Mushrooms. Set Mushroom caps aside; use stems another time.
  3. Cut zucchini into 12 half-inch crosswise slices. Remove stems from tomatoes. Remove meat from marinade.
  4. Thread skewers alternately with vegetables using 3 pieces meat, 2 slices zucchini, 2 Mushrooms, and ending with tomato on 10-inch skewers.
  5. Brush kabobs with remaining marinade. Broil about 3 minutes from source of heat 8 to 10 minutes, turning once. Serve on fluffy rice.

Beer and Honey Bratwurst

Ingredients

  • 5 bratwurst links (about 1 1/4 pounds)
  • 1 medium Onion, chopped
  • 3 cups Honey flavored beer
  • 2 tablespoons yellow mustard

Directions

Brown bratwurst and Onion in large skillet over medium-high heat, about 8 to 10 minutes. Combine beer and mustard; pour into skillet until fully cokked and  let stand covered 5 additional minutes.

Fried Egg Breakfast Burger
  • 1 1/4 pounds ground beef chuck (90% lean)
  • 4 kaiser rolls, split or Bagel
  • 1/2 cup Olive Oil
  • 4 large eggs
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper

Directions

  1. Mix Salt, Pepper, Olive Oil and Ground Beef
  2. Set Grill to Medium High Heat turn once each side till desired tenderness
  3. Fry Eggs on Skillet
  4. Lightly toast buns or bagel
  5. Place fried eggs on top off ground beef and serve

BBQ Tofu Sandwiches

Ingredients

  • 6 oz. BBQ-flavored tofu
  • 2 4-oz. slices Cornbread, about 4×4 inches square
  • 6 oz. vegan Cheese slices, Cheddar Cheese flavored
  • 1 cup vegetarian baked Beans, heated through
  • 1/4 cup soy “Bacon” bits

Directions

  1. Preheat broiler. Spray skillet with nonstick cooking spray.
  2. Slice tofu in half horizontally. Heat skillet over medium heat, and grill tofu halves until golden on both sides, about 8 minutes total.
  3. Meanwhile, arrange Cornbread slices on baking pan. Top with sliced tofu and Cheese slices, and broil until Cheese melts, for 3 to 5 minutes. Remove from oven, top with equal portions of Beans, sprinkle with soy “Bacon” bits and serve.

  3. Yeah I thought about that but I have seen a fair amount of people bring slow cooked food to tailgate parties and the recipe is pretty good so I decided to leave it in.
