Recipe: Lemon Scones
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- teaspoon salt
- 1 tablespoon lemon zest
- 6 tablespoons cold butter, cut into pieces
- 1 egg, beaten
- cup milk (or half and half)
- 1 tablespoon vanilla extract
In a medium bowl or a food processor combine the flour, sugar, baking powder, salt & lemon zest. Cut in the butter pieces until the mixture is crumbly. In a separate bowl combine the egg, milk & vanilla. Add the egg mixture to the dry ingredients. Mix until the dough forms a ball. Turn the dough onto a floured board & knead. Roll out to half-inch thickness. Using a 2-inch cutter, cut out scones. Place on an ungreased baking sheet & brush with beaten egg. Bake in a 400-degree oven for 10 to 12 minutes, or until light brown. Makes 14 to 18 scones.
