Wapiti Meadow Ranch - guest ranch, fly fishing lodge and B&B - is located on the edge of the largest Wilderness area in the Lower 48, astride one of the finest trout fly fishing streams in the Inland Northwest. We offer a hearty gourmet ranch breakfast and a take along picnic lunch for our B&B guests, in addition to their own comfortable privaate cabin accommodation. Riding, hiking and biking trails lead right out of the ranch grounds which also offer a trout pond, volleyball, and horseshoes for active guests. Our comfortable porches 'with a view, lodge great room, and cabin living rooms provide plenty of space for reading, visiting and just plain relaxing in one of the most spectacular mountain settings in the Salmon River Range of the Rockies. Recipe: Stuffed French Toast


  • 8 slices sourdough bread
  • 1 8 ounce package cream cheese, softened
  • 4 tablespoons powdered sugar
  • 4 teaspoons vanilla extract
  • 8 eggs
  • 1 1/2 cups milk
  • 1 tablespoon cinnamon
Preheat griddle to 250 degrees about 45 minutes before cooking.

Stir well together the cream cheese, powdered sugar and 2 teaspoons vanilla. Spread thickly on four pieces of bread, then place another piece of bread on top of each. Beat together eggs, cinnamon and other 2 teaspoons of vanilla. Add milk and whisk together until well mixed. Pour 2/3 of milk/egg mixture in 9x13 pan or sided cookie sheet and place stuffed bread on top. Allow to soak at least 15 minutes. Turn stuffed bread over, adding remainder of milk/egg mixture to dish, and allow to soak another 15 minutes. Butter griddle well, cook 10 to 15 minutes per side, or until bread is cooked through and is medium to dark brown on surface. Serves 4.
