Recipe: Scrumptious Raspberry Preserves

  • 3 lbs. raspberries to yield 4 c. crushed berries
  • 6 1/2 c. sugar
  • 3 oz. liquid fruit pectin

Remove stems & caps from raspberries. Rinse in sink of cold water and stir gently for 5 seconds. Drain. Puree raspberries in food processor (15 seconds). Measure raspberries- place in 6-8 qt pot. Stir sugar into fruit and mix well. Bring to rolling boil over high heat, stir constantly. Add pectin and return to rolling boil. Boil hard 1 minute, stir constantly.

Remove from heat. Skim off foam with metal spoon and discard. Ladle preserves into liquid measuring cup. Fill jar immediately to 1/8 \" of top. Wipe jar rim and threads with clean, damp cloth. Remove jar lid from boiling water and wipe dry. Place lid on jar and screw tightly. Invert the jar for 5 minutes, then turn upright. Check seals after 1 hour. Lid should be curved down.
